ZUCCHINI & POTATOES FRITTERS
100% Organic Extravirgin Olive Oil
6 Boiled Mashed Potatoes
4 Grated Zucchini
4 ½ oz - 125 g Breadcrumbs
4 ½ oz - 125 g Parmigiano Reggiano Cheese
2 oz - 50 g Chopped Parsley
In a bowl mix potatoes, zucchini, eggs, parsley, breadcrumbs and parmigiano then season with salt and nutmeg then stir well and make fritters.
In a pan with extravirgin olive oil fry fritters on both sides until golden.
