CAPRESE CAKE

Ingredients
9 oz - 250 g Flour 00
9 oz - 250 g Finely Chopped Dark Chocolate
9 oz - 250 g Finely Chopped Toasted Almonds
9 oz - 250 g Sugar
4 ½ oz - 125 g Melted Butter
4 Egg Yolks
4 Whipped Egg Whites
Salt
Directions
Melt the chocolate in a bain-marie.
In a bowl with butter put egg yolks, sugar, a pinch of salt and almonds then stir well then add chocolate and egg whites then stir well.
In a buttered and floured cake pan of 11 inches diameter pour mixture.
Bake in preheated oven at 180°C/360°F for 45 min.
Serve.
