RICOTTA & ALMONDS CAKE

RECIPE

Ingredients
1 lb - 450 g Flour 00
8 oz -225 g Sugar
9 oz - 250 g Ricotta Cheese
3 oz - 75 g Chopped Almonds
3 Egg Yolks
3 Whipped Egg Whites
1 tbsp - 15 g Baking Powder
4½ oz - 125 g Softened Butter
Salt
Directions
In a bowl put sugar and ricotta then add egg yolks, butter, flour and baking powder then add egg whites and a pinch of salt then stir well.
In a floured and buttered cake pan of 11 inches diameter pour the mixture and garnish with almonds.
Bake in preheated oven at 180 °C/360 °F for about 40 min.
Serve.
