CHICKPEAS SOUP

RECIPE

Ingredients
100% Organic Extravirgin Olive Oil
1 Chopped Onion
2 Chopped Garlic Cloves
9 oz - 250 g Fresh Chickpeas
4 ½ oz - 125 g Diced Cherry Tomatoes
2 Diced Potatoes
2 cups - 500 ml Water
3 oz - 75 g Parmigiano Reggiano Cheese
Salt
Black Pepper
Directions
In a pot with extravirgin olive oil fry onion and garlic until golden then add chickpeas, potato and tomato then stir well.
Season with salt and black pepper then pour water and cook covered for 30 min.
Sprinkle with parmigiano then drizzle with extravirgin olive oil.
Serve.
