RICOTTA & APRICOT CAKE

RECIPE

Ingredients
1 lb - 450 g Flour 00
9 oz - 250 g Sugar
9 oz - 250 g Ricotta Cheese
10 Sliced Apricots
3 Egg Yolks
3 Whipped Egg Whites
1 tbsp - 15 g Baking Powder
4 ½ oz - 125 g Butter
Powdered Sugar
Salt
Directions
In a bowl put sugar and ricotta then add egg yolks, flour, butter and baking powder then add egg whites and a pinch of salt then stir well.
In a floured and buttered cake pan of 11 inches diameter pour the mixture then garnish with apricot.
Bake in preheated oven at 180 °C/360 °F for about 40 min.
Sprinkle with powdered sugar.
Serve.
