Porchetta is a typical dish of Central Italy.

Porchetta consists of a whole pig, emptied, boned and seasoned.

There are two basic types of seasoning:
1. In Tuscany and Lazio, it is flavored with rosemary;
2. In Umbria and Marche, it is flavored with wild fennel.
