Zucchini Parmigiana

ZUCCHINI PARMIGIANA

RECIPE

Ingredients
100% Organic Extravirgin Olive Oil
8 Sliced Lengthwise Zucchini
1 lb - 450 g Sliced Mozzarella Cheese
2 lb - 900 g Chopped Tomatoes
2 Chopped Garlic Cloves
2 oz - 50 g Chopped Basil
4 ½ oz - 125 g Parmigiano Reggiano Cheese
Salt
Black Pepper
Directions
In a pan with extravirgin olive oil fry zucchini until golden on both sides.
In another pan with extravirgin olive oil fry garlic until golden then add tomatoes, basil, salt and black pepper then cook for 15 min.
In a baking dish greased with extravirgin olive oil put layered zucchini, mixture, parmigiano and mozzarella then continue until completion of the ingredients.
Bake at 200°C/400°F for 45 min.
Serve.
