Eggplant Parmigiana

EGGPLANT PARMIGIANA

RECIPE

Ingredients
100% Organic Extravirgin Olive Oil
6 Sliced Lengthwise Eggplant
9 oz - 450 g Sliced Mozzarella Cheese
2 lb - 900 g Chopped Tomatoes
4 Chopped Garlic Cloves
9 oz - 250 g Parmigiano Reggiano Cheese
2 oz - 50 g Chopped Basil
Salt
Black Pepper
Directions
In a pan with extravirgin olive oil put fry eggplant until golden on both sides.
In another pan with extravirgin olive oil fry garlic until golden then add tomatoes, basil, salt and black pepper then stir in the mixer.
In a baking dish greased with extravirgin olive oil put eggplant and garnish with mixture, parmigiano and mozzarella then continue until completion of the ingredients.
Bake at 200°C/400°F for 45 min.
Serve.
