STUFFED EGGPLANT
RECIPE
Ingredients
100% Organic Extravirgin Olive Oil
6 Eggplant
1 lb - 450 g Diced Mozzarella Cheese
2 lb - 900 g Chopped Cherry Tomatoes
2 oz - 50 g Chopped Basil
4 ½ oz - 125 g Parmigiano Reggiano Cheese
Salt
1 lb - 450 g Diced Mozzarella Cheese
2 lb - 900 g Chopped Cherry Tomatoes
2 oz - 50 g Chopped Basil
4 ½ oz - 125 g Parmigiano Reggiano Cheese
Salt
Black Pepper
Directions
In a bowl with extravirgin olive oil put mozzarella, tomato, eggplant pulp and basil then season with salt and black pepper then stir well.
In a baking dish put eggplant and fill with mixture then sprinkle with parmigiano and drizzle with extravirgin olive oil.
Bake at 200°C /400°F for 45 min.
Serve.
