Asiago is a semi-cooked cow's milk cheese.
Asiago cheese is made exclusively with milk coming from the Asiago plateau, in the Veneto region.
There are 3 types of Asiago cheese:
Asiago “Middle”, aged for 3-8 months, very tasty and sweet;
Asiago “Old”, aged for 9-18 months, with a strong and spicy flavor;
Asiago “Very Old”, aged for two years or more, with an intense, enveloping and penetrating flavor.
