2 lb - 900 g Mashed Potatoes
Chopped Parsley
2 Eggs
Breadcrumbs
Salt
Black Pepper

Directions
Mix the puree with the two yolks and chopped parsley, adding salt and black pepper.
Let cool and then form sticks and fry in a pan with extravirgin olive oil after being passed in beaten egg whites and breadcrumbs.
Drain on paper towels then sprinkle with salt.
Serve.
