ZUCCHINI & POTATOES PIE
100% Organic Extravirgin Olive Oil
10 Beaten Eggs
3 Grated Zucchini
1 Chopped Onion
8 Boiled Mashed Potatoes
4 ½ oz - 125 g Parmigiano Reggiano Cheese
2 oz - 50 g Breadcrumbs
In a pan with extravirgin olive oil put onion and fry until golden then add zucchini and fry until golden.
In a bowl pour eggs, potato and parmigiano then stir well then add mixture and season with salt and black pepper then stir well.
In a baking dish put mixture then sprinkle with parmigiano and breadcrumbs.
Bake in a preheat oven at 180°C/360°F for 15 min until golden.
