SAUSAGE & BELL PEPPERS

RECIPE

Ingredients
100% Organic Extravirgin Olive Oil
6 Eggplant
1 lb - 450 g Chopped Cherry Tomatoes
2 oz - 50 g Chopped Basil
Chopped Black Olives
Capers
Salt
Black Pepper

Directions
In a bowl with extravirgin olive oil put tomato, eggplant pulp, black olives, capers and basil then season with salt and black pepper then stir well.
In a baking dish put eggplant and fill with mixture then drizzle with extravirgin olive oil.
Bake at 200°C /400°F for 45 min.
Serve.
