Lemon & Mandarin Cream Cake

LEMON & MANDARIN CREAM CAKE

RECIPE

Ingredients
1 ½ - 600 g Flour 00
4 Eggs
9 oz - 250 g Sugar
9 oz - 250 g Softened Butter
1 Grated Mandarin Peel
Salt
4 ½ oz - 125 g Sugar
4 ½ oz - 125 g Softened Butter
½ cup - 125 ml Lemon Juice
3 Egg Yolks
Powdered Sugar

Directions
In a bowl put flour, eggs, sugar, butter,  mandarin peel and a pinch of salt then stir well.
In a pot put lemon juice, butter, egg yolks and sugar then cook low heat for about 5 min.
In a floured and buttered cake pan of 11 inches diameter pour ½ dough then pour mixture then ½ dough.
Bake in preheated oven at 180 °C/360 °F for 40 min.
Sprinkle with powdered sugar.
Serve.
