MINESTRONE

RECIPE

Ingredients
100% Organic Extravirgin Olive Oil
9 oz - 250 g Pasta short and scored
1 Chopped Leeks
1 Chopped Celery
1 Chopped Onion
2 Chopped Garlic Cloves
9 oz - 250 g Fresh Beans
2 Diced Potatoes
2 Diced Carrots
4 ½ oz - 125 g Green Peas
4 ½ oz - 125 g Tomato Sauce
2 cups - 500 ml Water
3 oz - 75 g Parmigiano Reggiano Cheese
Salt
Black Pepper
Directions
In a pot with extravirgin olive oil fry leek, celery, onion and garlic until golden then add beans, potato, carrot, green beans and tomato sauce then stir well.
Season with salt and black pepper then pour water and cook covered for 30 min.
Sprinkle with parmigiano and drizzle with extravirgin olive oil.
Serve.
