PUMPKIN & POTATOES BALLS
100% Organic Extravirgin Olive Oil
1 lb - 450 g Mashed Boiled Pumpkin
1 lb - 450 g Mashed Boiled Potatoes
2 Beaten Eggs
4 ½ oz - 125 g Parmigiano Reggiano Cheese
4 ½ oz - 125 g Diced Mozzarella Cheese
2 oz - 50 g Chopped Parsley
In a bowl put pumpkin, potatoes, eggs, parmigiano and parsley then season with salt and black pepper then stir well and make balls then fill with mozzarella.
Dip balls in beaten eggs then dip in breadcrumbs.
In a pan with extravirgin olive oil fry balls for about 10 min until golden.
